when determining the 33% food cost target, does it include paper products, disposables, cleaning products, etc., or is it strictly food

Hi Donna,

The food cost target should include all foods, non-alcoholic beverages (unless you serve alcohol and prorate a portion of fountain drink costs to the bar along with bar mixers, etc.) and disposable products that are "consumed" in the sale of foods.  This would include plastic ware, napkins, carryout containers, carryout bags, etc.  It would NOT include paper goods used for cleaning (paper towels) or anything else.  Cleaning products are supplies and need to be in that category, not food cost.
