Question In an emergency situation, could a ship of the time (approx 36 gun) cut away from their anchor in order to get away faster.
Any idea how long it took for the anchor to be weighed in those days?

Yes, they could. I would venture that it could take upt to an hour if two anchors were deployed. It was no fun to manually pull in the anchor by windlass. The boat as actually pulled to the anchor and then the anchor pulled up vertically breaking it free of the bottom.
