Below, there are two conversations. Which one is correct?

Peter: Hi, Jack. Nice to meet you.
Jack: Hi Peter. ME TOO.


Peter: Hi, Jack. Nice to meet you.
Jack: Hi Peter. YOU TOO.

Both are OK. But there are so many ways people respond to "nice to meet you" that it's not worth worrying about. I usually respond with "and you." Choosing only between the examples you provided, I expect most native speakers would choose the second. But either would be understood by the other person the same way.
