Answer Good question. As people get older, their sense of taste changes. It is impossible to tell if this is due to the change in the taste buds or a change in the brain that processes the taste information. Most scientists believe it is a combination of both.
Very young babies are very sensitive to tastes, and as people get older they tend to prefer more strongly-flavored food. This may be due to "burnout" or overuse of the tastebuds. People who eat a lot of very spicy food or who smoke tend to lose the ability to taste subtle flavors. People who habitually eat a lot of garlic no longer notice slight flavoring of garlic, etc.
This starts at a very young age. Few toddlers like strongly-flavored foods like Brussels sprouts or coffee, for instance.
