My boyfriend wants to watch me give him head. I'm ok with giving him head but I feel really shy about letting him watch or about giving eye contact. I would like to know if there's anything I can do or he can do that would make me more comfortable with the situation.

The fact that he wants to watch you should make you more comfortable. It means he finds you appealing, and that seeing you makes the experience all the much better.

If you really don't want him to look at you, tell him. Tell him that you are shy. Hopefully he will understand.
