Dear Cynthia, my question: holding the water glass with all fingers on the stem or not. Of course there are different shape glasses. Also the little finger should be off from the stem on any glasses (wine, champagne, etc.)

Thank you for question.  The proper way to hold a glass is pretty much the same. No matter what style.
Putting your pinkies in the air is considered affected behavior and  silly- not proper etiquette.
A white wine glass is held with three or four fingers curled around the stem. The red wine glass is held with the whole hand around the bowl. Water tumblers are held the same way-.the whole hand for stability.  If the glass has stem and ice in the glass - hold it by the stem with three, four or all five fingers. It depends upon the fill and weight of the glass. Use your common sense to hold the glass safely.
