Question How to improve the flavor of whole spices when they are old?
Answer Sorry to say Francine, that is like asking, "How do you look 18 when you are 80?"
It just isn't possible to revive old spices. When they are old, they are dead and need to be buried. You can try grinding them to see if any of their oils have survived in their centers. If they don't give off an aroma then there is no hope for them.
Light, heat and time are spices enemies.
I store my spices in vacuum zip bags in a freezer.
