Question
i have 1 big bag of red & green chillies in the freezer from last year crop what can i make with them

Answer
Alex,  

Not knowing what type of chillies and how big they are I will give you a couple of things to try.

If they are big enough to stuff, scrape out the inside and put in chopped shrimp, crab, or what ever you like and cheese.  then you can batter them in cornmeal or flour and fry them.  

If they are small, roast them in the oven, by pouring olive oil over them and setting your oven at 350 degrees for 1 hour or so. you want the skin really brown.  Peel of the skin chop them up, mix with chopped tomatoes, onion, garlic, cilantro and you have a salsa for dipping.
