Question
If somebody struck Odo, would he get pushed back?

Obviously people can physically interact with him. The vast majority of the time Odo remained 'solid' when people touched him.

So I would think that, like the Hologram Doc (when solid), Odo would get pushed back if struck.

Yes, despite his liquid form it appears as though Odo takes on at least some of the characteristics of a humanoid when he assumes the form of one.  So, to that end, he'd have at least some mass and would experience the effects of force.

Odo seems to have some ability to control his physical density within some prescribed limits.  I doubt he could become intangible enough to walk through a solid wall (like the super hero Shadowcat), or that he could make himself as hard as a diamond, but maybe an experienced member of his species is able to do those things.

I think your assumption is right on target.
