Question I havent been able to find out how come on the cover of the book that Luke is holding a red lightsaber and Vader is holding a blue one. Any help on this would be appreciated.

As you may know, before Episode VI was released, a bunch of promotional material have been released showing the title "Revenge of the Jedi" (instead of "Return of the Jedi"). One such promotional material was a poster, created by a famous poster artist named Drew Struzan. This old Episode VI poster depicts Luke holding a red lightsaber and Vader holding a blue lightsaber. As of today, no one really knows why the lightsaber colors were switched, but seeing that this was just a teaser poster, they were probably less strict on how the poster was designed (thus the error). So now, to answer your actual question, the cover of the Star Wars Encyclopedia includes the same image from the said teaser poster in honor of Mr. Struzan's original artwork.
