Question Hi,
Thank you for taking my question. I love green tea. I was just wondering why it is recommended that green tea be steeped in water that is not quite boiling. What will happen if I steep it in water that has been boiling? Is the flavor compromised? Does it lose nutritional value?

Answer Green tea gets bitter if it is steeped at too high a temperature or if it is steeped too long.
For green tea, bring your water to a full, rolling boil then allow it to cool until the temperature drops to around 180 degrees Fahrenheit. Steep your tea 2 to 3 minutes.
All green teas are different in their steeping requirements (as are black teas). You should experiment with each tea you have and determine the best temperature and brewing time for the tea to suit YOU the best.
