Why is such importance given to the partaking of the wine and bread, by the Catholic Church, when Paul in his dealing with this reminder, didn't at all?

As Jews were taught from childhood not to eat anything with the blood, or touch anything a woman with an issue of blood touched, did many of Jesus disciples leave him after hearting of having to partake of the wine, as His blood.  And some disciples stayed, because they seemed to recognize that He wasn't speaking of " real blood ", but only covenant elements.


I don't recall our Lord ever limiting the Eucharist to mere "covenant elements" (whatever that would mean!) as He indeed called them His Body and Blood, pure and simple.  And while Paul expresses clear indifference as to whether Christians should also continue in the Law of Moses (those who observe new moons and Sabbaths per the Law of Moses ought not look down on those who were never subject to that Law or freely choosing to be free of it, and vice versa) (Colossians 2:16-17 and other places), he most certainly does advise all careful and due reverence in the Christian observance of the Eucharist (1 Corinthians 11:17-32)
