We want to travel from La Mata,Torrevieja to Valencia on 11th August. What is best way to make this journey?

From La MAta you should get to Torrevieja, these are the local buses

There is a bus stop at the bus station (see nr 29)

From that bus station in Torrevieja take another bus to Alicante.

arriving to the Alicante bus station.

and from Alicante you may take another bus to Valencia or take the train.
By bus with Alsa

takes 2h30 from 18,15euros

By train from Alacant-Terminal
http://www.renfe.es
several types of trains, cheaper is 12,25euros and takes 2h

Look at this map of Alicante where i have marked the bus and train stations, in case you have to change from one to the other.

There is no big difference betweeh bus or train from Alicante to Valencia, depends on the hour of the day, the date, etc, probably buses are a bit cheaper, with not a big difference of time to get to Valencia, just 30 minutes.

In Valencia train station is in the center of the city, but both bus and train stations have metro station
