I am off to Spain next week and i need to get from Seville to San Sebastian. I
definitely cannot afford to fly so bus or train is my only option (i know it is
far!)
Would it be best to catch a train/bus to Salamanca and from there get a train/
bus to San Sebastian? Also, what is the best way to get to San Sebastian to
Madrid?

My first thought would be moving to MAdrid and from there a train/bus to San Sebastian, but i have look also the option through Salamanca.

There are not direct trains to Salamanca, Renfe show that you should get to Madrid first.
from Salamanca to San Sebastian By train you are late for the morning train, and there is an overnight train, coming from Portugal, that will cost 27,60.

Taking the bus to Salamanca of 11am arriving at 18:15 waiting all the afternoon until 0:05 ... i think is not a good option.
from Salamanca to San Sebastian with Alsa again

you could take the 6am bus from Sevilla and get in time to Salamanca for the 14:45 bus to San Sebastian.

By train, with AVE, the best offer is 67,10euros. Looks like is going to be expensive for you.
takes about 2h30.
You could trake a train with Star offer from Sevilla at 11.45 arriving to madrid at 14.15, change station from Atocha to Chamartin (cost 1,15 with commuter trains and will take about 20 minutes)
and be in time to get the train at 16.20 that cost 48.20.
Total travel time 9h.45 cost: 106.45
i don't know if this fits with your budget, but it's better a plane+bus option i explain below.
Madrid-San Sebastian by bus
cost 31.54 and takes 5h15.
could take the 8am bus arriving 14.15 to Madrid Estacion Sur bus station. Get to Avda America bus station, cost 1euro and about 30 minutes using metro, in time to get the 15.30 bus arriving to S Sebastian at 21:55
total travel time: 14h, cost, 51.79

Definetly the sevilla-salamanca-ss takes 20 minutes more and cost 10euros more.
The cheaper option is bus+bus through madrid
The fastest option is train+train, saves 4h,cost 55euros more than the only bus option.

Total travel time: 2h15, cost about 95euros,
you should add the time to get to the airport in Sevilla, one hour or two at least before the departure time and the real final cost of the plane ticket.
