I live in Madrid, and travel frequently to Valencia. I have also travelled to many places all over spain, if haven't been there i'd try to help anyway providing my knowledge and links. I enjoy trekking in the mountains, and know pyrinees, Picos de Europa and mountains in the center.

Question
Hello,
Our family of 8 will be renting a villa in Toledo for Dec. 27-Jan. 3. We have a few questions:
1)  How far are the ski slopes from Toledo(Either by train or car)
2)  What is the weather generally like during this time of the year
3)  What day trips would you suggest
Thanks for your help!

Answer
Hello Carlos

1-Nearest ski slopes are Navacerrada ski station at Madrid. It's small, and the parking there is also tiny and that causes many traffic problems. The good thing, you can get there by train.
Next to Navacerrada is Valdesqui, also in Madrid province, have better installations, slopes and snow conditions, nearest train station is Cotos.

Toledo-Madrid by train

Madrid-Cercedilla-Navacerrada with 'cercanias' local trains. Cercedilla-Navacerrada-Cotos is a mountain train.

Toledo-Puerto Navacerrada
135km, 1h40
Toledo-Valdesqui about 5km more after Navacerrada pass (puerto = mountain pass)

Another ski station at a reasonable driving distance are La Pinilla in Segovia province. 196km from Toledo, about 2h15

and La Covatilla at Salamanca province

270km and about 3h from Toledo

But in fact the nearest ski 'slope' is at Xanadu commercial center at Arroyomolinos (Madrid), and indoor small ski slope open all over the year (and shops also open everyday, even holydays).

It's about 70km from Toledo (50minutes)

2-weather is normally cold and dry, cold specially by night, by day temperatures may be even a bit warm. There will be snow in the mountains, almost for sure, i can remember a few years ago a terrbile lack of snow and ski resorts in the center of spain had to use artificial snow, but normally there is enough snow at the end of december.

3-From toledo i recommend Madrid, by car or train
Also Consuegra (by car)
And via madrid --> Segovia, El Escorial, Avila

I hope this helps a bit.
