Question
I have been told that GBH and ABH do not exist in Scotland.  If this is true, what are their equivalents and how would they be dealt with?

You have been advised correctly.

I would surmise, if I am correct in interpreting your abbreviations as Grievous Bodily Harm and Attempted Bodily Harm, that they would equate to Serious Assault and Assault (an assault including any attempt thereat or 'near miss') respectively under Scottish law.
