Question
I am a ovo-lacto vegetarian and we are having a vegan to Thanksgiving dinner.  I would like to adapt some recipes to be vegan for the guest and need some dairy and egg substitutions.  I have a recipe for a leek wrapped mushroom loaf but it involves a little cream or milk and a couple eggs.  I thought I would use soy or coconut milk for the cream but what could I substitute for the eggs which help hold the loaf together?  I also have a recipe for mashed potatoes that calls for plain yogurt.  What could I substitute for the yogurt?  Any suggestions?

Thanks for your questions. They're great ones. I'd love the recipe for the leek-wrapped mushroom loaf. It sounds fantastic!

I'm not sure I'd use coconut milk for the cream because of it's innate sweetness. However, soy creamer will work very well. As far as holding the loaf together, you might consider blending 1 tablespoon flax seed with 3 tablespoons water until the mixture is thick and creamy for each egg.

Instead of the yogurt for the mashed potatoes, you could use olive oil. You'd be surprised how creamy it makes recipe. Just use 1/4 less than you'd use of the yogurt.
