Question My sister is a vegetarian, and I was wondering if you could suggest some interesting vegetarian meals I could cook for the family, preferably on a low budget. Any help you could give would be great.
Answer Hi Beth,
Here are a few suggestions:
-marinated, stir fried tofu (try sesame oil and soy sauce), with vegetables and rice
-black beans with rice and salsa
-bean burritos with cheese in whole wheat tortilla
-lentil soup with salad
-spinach or vegetable quiche with salad
-hummus and sauteed vegetable wrap (in flour tortilla)
-vegetarian lasagna
-pasta primavera with chickpeas
-spaghetti with tomato lentil sauce
-falafels
-eggplant moussaka or parmigiana
-tofu or vegetable curry
