This question is so extremely broad it's impossible to answer as it stands. If you wish for guidance in one form of pastry, I will give it a good try - but be aware that with so many different kinds of pastry, there are sure to be quite a few that I have no idea how to make.
Please send me a specific pastry that you would like to learn to make and, if I can, I'll tell you what to do.
