Answer Hi Lisa,
Here is a recipe for Lentil Walnut Burgers from _The Moosewood Cookbook_ by Mollie Katzen.
3/4 cup dry lentils (I prefer to use red lentils)
1 1/2 cups water
2 tbsp cider vinegar
1 tbsp peanut or olive oil
1 cup finely minced onion
4-5 large cloves garlic, minced
about 10 large mushrooms, minced
1/2 cup very finely minced walnuts
1 tsp salt
1 tsp dry mustard
fresh black pepper to taste
1/2 cup fine bread crumbs or wheat germ
Place lentils and water in small saucepan and bring to a boil. Lower heat and simmer until lentils are soft and liquid is gone, approx 30 minutes.Transfer to a medium size bowl add vinegar, and mash.
Heat oil in a medium skillet. Add onions and saute over medium heat for about 5 minutes. Add remaining ingredients except bread crumbs/wheat germ and saute 5-10 minutes or until vegetables are tender. Add vegetable mixture and breadcrumbs to lentils and mix well. Chill at least 1 hr before forming into patties.
Form into 4" diameter patties. Fry in a small amount of hot oil until browned and crispy on both sides. Makes 4-6 servings.
