Question
How much $ would you expect to spend with a family of 4 with park hopper and a regular dining plane paid. We will start our first trip to WDW Monday sept 22.

Laura,
You have your largest part taken care of already. The only thing that you would probably be purchasing in addition to tickets, dining and accommodations would be souviniers and the cost of that can vary. My husband has alway had a budget of $100/day, that was before we started purchasing dining plan, now we budget that for the whole trip for the kids to buy something and maybe us too. So really it all depends on how much you want to spend on those kinds of things. With your dining you each get a snack/person/day, so there really isn't much need to worry about that unless you are wanting something that the plan doesn't offer.
