I am a 35 year old male weighing about 180 pounds and 5'11 height. I have read with interest your answers to all the questions. What you advocate really makes sense to me.
My major issue is with my gut - I don't drink beer but I have a pretty huge belly - its embarrassing - I hold my stomach in all day.
What sort of lifting would you advocate for me? Would I be okay with doing deadlifts and overhead presses just once a week with heavy weights? Also, is it okay to use dumbbells instead of barbells?

Answer your lifting sounds alright, dumbells are excellant, what you might add is two or three days of aerobic exercises..running is always your easiest option.
an hour or two of low impact aerobics will burn off some of that extra weight...and of course pay attention to your diet. we are all different, I lose weight eating mostly meat and fat, some people would gain weight on the same diet...see what works for you, it doesn't have to be an agonizing discipline..just start eating what doesn't fill you up every time..that would be a start...
