I would like to know the value of an unopened bottle of Veuve Clicquot Ponsardin Royal Celebration Cuvee that was served at the 1981 wedding of H.R.H. the Prince of Wales and Lady Diana Spencer. The bottle lists as Brut 1975 and specifies the wedding date and "Royal Celebration Cuvee" on the label.
I would also like your opinion of where to list for sale, not sure if eBay is the right place for this.

I don't have great news for you. While this was a nice bottle of bubbly, even the very best Champagnes begin to show their age after twenty-five years, and this one is far older than that. It might still have some charm, but the fruit will be fading, the bubbles will not be as lively, and the over wine will have faded. Which is to say that you won't get wine connoisseurs to pay much money for this one--Maybe $50-75.
A fan of the royal family might pay more, just as a curiosity, but that's beyond my expertise.
Please note that it is illegal for US citizens to sell alcohol beverages, so you'd have to work through an auction house or a fine wine retailer---and they would charge a significant commission. I don't think it would be worth your trouble.
