I start with a simple A4 text document set in a font which my customer has sent. All good at this point. I then try to copy the text and set the font in to an A3 template for printing.

In the A3 document the font is set to Times New Roman. If I then try to change this to my customer's font it gets set to Courier New.

Jon, it sounds like you do not have the font installed on your computer and it is defaulting to one of your default fonts.

I would check the following

When you install new fonts, remember that each font will only work with the computer you've installed it on. If you share Office documents with other people or plan to use or view your document on a different computer, the new fonts you've installed on your computer might not be displayed the same way on the other computer. Text that is formatted in a font that is not installed on a computer will be displayed in Times New Roman or the default font.
