Answer Dear Irene,
Well, in a love letter you write everything you feel. From the way you are happy around that person to the way they carry themselves. You express everything you can put into words onto that sheet of paper. A poem already is a great way of writing a love letter. You could write a little one on the side, or maybe a quote from yourself.
You can start the sentence easily with a ,"Hi," or,"I love you so much," or even,"You mean so much to me words can not describe."
